Carrot Cake

Carrot cake with walnuts and desiccated coconut, a must try recipe. Covered with cream cheese make it very special and taste good (according to all my tester la…muraikakla, Die Engineering staff, my colleague and few others). Cake recipe as follows :

2 cups of flour
2 tsp baking power
1 ½ tsp baking powder
A pinch of salt (hehehe…)
1 ½ cups of fine sugar
2 cups of grated carrot~ squeeze the juice
1 ½ cups oil
4 large eggs
1 cup desiccated coconut
1 cup chopped walnuts

Cream Cheese frosting
125g butter
1 pack cream cheese
1 tsp vanilla essence
½ cup icing sugar
2 tbs milk

Sift together all dry ingredients.
In large bowl, mixed together sugar, eggs and oil until well blended.
Add flour mixture a little at a time.
Add carrots, walnuts and desiccated coconut and mix together (squeeze juice from carrots ya).
Bake in grease springform pan for about 50 mins @ 170°C.(depend on your oven)

Cream cheese frosting - cream butter, cream cheese and vanilla. Add icing sugar and milk a little at a time and blend well.

Lets cake cool for 1 hour, covered with the cream cheese frosting and tadaaaa…ready to serve…
